Green Beans with Pine Nuts: Healthy Side Dish Option
Green beans have long been a tradition at many holiday tables, but a good number of those dishes are heavy on the calories in addition to the love. Not this one! Here is a healthy side dish, or main dish, that will change those traditions.
Keep this recipe handy. Once people taste it they are going to ask for a copy!
Ingredients:
2 pounds green beans, trimmed
2 teaspoons extra-virgin olive oil
1 medium onion sliced in long, thin wedges
1/4 teaspoon salt
Ground pepper to taste
1/4 cup toasted pine nuts
5-10 dehydrated or fresh figs
1 grated beet (optional)
Directions:
- Sauté onion with olive oil in a large sauté pan until golden .
- Slice figs in ½ or 1/5 sized equal pieces and add to the onions, let figs get a light crust.
- Add pine nuts and allow them to slightly brown.
- Add green beans, stir occasionally for even heat, cover and let cook until slightly tender.
Makes 8 servings.
