Bacon Cabbage Salad

  • 1 head of green cabbage
  • 1 yellow onion
  • 1 package turkey bacon
  • 1 cup walnuts
  • 1/4 cup caraway seeds
  • 1/3 cup gorgonzola crumbles
  • 1/ 4 cup olive oil
  • Salt to taste
  • Black pepper to taste


Begin by slicing the onion into long, slender slivers. Lightly brown the onion with oil on low heat in a large sauce pan. When the onion is browned, add caraway seeds.

Stir and allow caraway to gently heat.

Next, add turkey bacon cut into squares. Stir and allow bacon to brown. While bacon is browning, chop cabbage into slender pieces or 1-inch squares. When bacon is browned on both sides, add cabbage and cover. Allow the cabbage to wilt slightly.

The cabbage will need about 15 minutes on medium heat. Mix occasionally so that cabbage cooks evenly. After the cabbage has cooked, place in large serving bowl, stir in salt and pepper to taste.

Top with walnuts and gorgonzola crumbles.

Makes 4 servings.
