Pomegranate Lamb Stew

 

This pomegranate lamb stew is a delicious spicy fall stew that is easy to make in a crock pot. This recipe is Paleo and FLT compliant. With a wonderful blend of spices that are anti-inflammatory and immune boosting.

Makes 4-6 servings.

Ingredients:

  • 2lbs boneless lamb in cubes or use 7 lamb chops with bone
  • 2 small onions diced
  • 2 carrots chopped into 1 inch pieces
  • 1 granny smith apple chopped into 1/2 inch pieces
  • 1 tsp ground cumin
  • 1 tsp turmeric
  • 1 tsp red pepper flakes
  • 3 cloves of garlic minced
  • 1/2 tsp ground allspice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 14 Oz diced tomatoes with juices
  • 2 cups chicken broth or vegetable broth
  • A good handful of fresh mint
  • A good handful of fresh parsley
  • Seeds from 1 pomegranate

Instructions:

  1. Place all ingredients in a crockpot EXCEPT the fresh mint, parsley and pomegranate.
  2. Cook high for 4 hours or low for 8.
  3. If you don’t have a crock pot, it can still be made on the stove top.
  4. Before serving garnish with parsley, mint and fresh pomegranate seeds.
