Add some tasty campfire vegetables, easy to prepare vegetables to your next camping adventure. If it is easier, cut and prepare the vegetables ahead of time to make it easier to assemble and cook. Not headed out camping? You can also to this on the grill at home! This recipe can be used if you are participating in the First Line Therapy (FLT) eating plan.
Half of a Red, Yellow or green bellpepper
Half of a Zuchhini
Half of a Yellow Squash
1/4 of a White Onion
2 small Red Potatoes- quartered
Lay vegetables on sheet of tinfoil, (large enough to fold over and seal later)
Sprinkle with olive oil, pepper, rosemary to taste
Add a sprig of Mint
Fold foil over the veg mixture and seal the edges.
Set packets over the coals and let cook for 20 minutes or until vegetables are tender.
You can also cook packets on the grill, if you have one at the campsite.
Use tongs to remove packets from the fire.
Carefully open packets making sure not to get burned by the steam escaping.

Fat serving: 1/2 – 1 depending on amount of olive oil used
