Spicy Hard Boiled Eggs
The Perfect, Healthy Snack

Do you need a new quick snack to pack for work or school? If you like the smoky, spice of chipotle, you will love this simple and satisfying snack.
- 4 eggs
- 2 tablespoons mild-spice chipotle
- 1 teaspoon paprika
- 2 teaspoons salt
- 2 limes
Begin by hard-boiling the eggs*, allow them to cool, and peel. Next, put the eggs in a large bowl and squeeze the limes on top. Gently mix the lime juice to cover all the eggs. Then add the spices and salt and roll the eggs in the bowl so that they are evenly covered. You can then pack in small to-go containers or baggies, ready for a quick snack!
–An alternative preparation is to pack the hard-boiled eggs separately from the spices. Then you can dip the egg into the spice mix as you eat. This alternative will help keep your hands from getting chipotle on them.

*Place eggs, still in shells, in a pan of warm water. Turn the burner on medium/high – high, and set the timer for 15 minutes. If the water starts to boil over, turn the burner down to medium, but still keep it boiling. When the timer goes off, run the eggs under cold water until they are cool to the touch. Peel as needed or refrigerate until you are ready to use.
