Fennel Salad

Have You Ever Tried Fennel?

This delicious vegetable looks like celery and has a slight licorice flavor. It makes an excellent side to spring and fall dishes. My favorite preparation is combined with apples in the following fennel salad. This is the perfect salad to pack for lunch. It keeps well, has a fresh bright flavor, and is a great way to get more vegetables on your plate!


  • 1 fennel bulb, cleaned, and sliced thinly
  • 2 medium sized apples, sliced into thin crescent shaped slices
  • ¼ cup walnuts
  • 1 lemon juiced
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ½ cup unsweetened cranberries



Begin by slicing the fennel into thin slivers, then carefully rinse and wash.

Next, slice the apples thinly and add to the fennel in a large bowl.

Finally combine the rest of the ingredients and serve.

This salad keeps nicely in the refrigerator for about 5 days.
