The Instant Pot makes this tasty salsa chicken dinner so easy, that you will want to add it to your meal plan every week.  You do not have to thaw the chicken, which makes it possible to prepare as a last minute add on for unexpected guests.  This could likely be modified to be used in a slow cooker also.

Shredding the chicken after it is cooked turns leftovers into delicious chicken lettuce wraps.  You can also prepare zero carb miracle noodles or zero carb miracle rice with this meal.  For keto meal planning, you may want to bulk up the fat macro with some sour cream and/or shredded cheddar cheese.

Instructions
  1. Follow your Instant Pot instructions for getting ready to start.
  2. Place the frozen chicken into the removable pot.
  3. Pour the salsa over the chicken.
  4. Set your instant pot for 25 minutes on manual.
  5. Close the vent.
  6. Let the pot come up to pressure, cook, and then allow for natural release. Always be careful of the steam when opening the pot.
  7. Use two forks to shred the chicken while still in the pot.
  8. Mix shredded chicken with fluids in the pot.
Recipe Notes

This is delicious when served as lettuce wraps, or over shredded cabbage mix.  If you want to boost the fat content, consider sour cream and/or cheddar cheese.  Any of these choices need to be added to your macros.
